Golden Delight Pancakes (unleavened)

Pancakes! What more can I say...
This recipe came to me through a friend of a friend via email. So not to flood her with email, I have withheld her name and email address, Just a simple Thank you to L.

1 C. cottage cheese
1/4 C. oil
6 eggs
1/4 C. milk
1/2 C. unbleached (or regular white) flour
1 tsp. vanilla extract
1/4 tsp. salt

Put all ingredients into blender container. Cover and blend at high speed 1 minute, stopping half way to scrape down sides of blender with a rubber spatula. Bake on greased griddle using 1/4 cup batter for each pancake.  Don't over-bake as they should be velvety inside, not dry. Dust with sifted powdered sugar (optional).  For an extra treat top with your favorite fruit toppings or syrups

Yield: 14 - 5 inch pancakes per recipe.
Note: Most blender containers will hold a double recipe to make enough batter for 28 pancakes.  Refrigerate leftovers.  They reheat well.  You can also make the batter the evening before, and put the blender container in the fridge.  The next morning just put the container back on the blender and give it a whirl for a few seconds to remix the batter before you make the pancakes as usual.

The picture I took this morning was a "one" full recipe with only one pancake missing (we had someone sampling before I got the camera out!!   I didn't add the fruit sauce first, so folks could see what the plain pancakes look like.  I used an electric griddle at 350 to make these, using spam spray on the non stick surface.  I could have made them a little lighter in color and they would have been good, it is important not to dry them out, they are so much better in the moist stage, just barely browned. We like a little melted butter drizzled over the pancakes with the powdered sugar--with, or without warm fruit sauce.  For company I put a spoonful of fruit sauce on each pancake and roll them up or simply fold over with a dollop of whipped cream.  Yummmmy!
