Golden Delight Pancakes (unleavened)

Pancakes! What more can I say...
This recipe came to me through a friend of a friend via email. So not to flood her with email, I have withheld her name and email address, Just a simple Thank you to L.

1 C. cottage cheese
1/4 C. oil
6 eggs
1/4 C. milk
1/2 C. unbleached (or regular white) flour
1 tsp. vanilla extract
1/4 tsp. salt

Put all ingredients into blender container. Cover and blend at high speed 1 minute, stopping half way to scrape down sides of blender with a rubber spatula. Bake on greased griddle using 1/4 cup batter for each pancake.  Don't over-bake as they should be velvety inside, not dry. Dust with sifted powdered sugar (optional).  For an extra treat top with your favorite fruit toppings or syrups

Yield: 14 - 5 inch pancakes per recipe.
Note: Most blender containers will hold a double recipe to make enough batter for 28 pancakes.  Refrigerate leftovers.  They reheat well.  You can also make the batter the evening before, and put the blender container in the fridge.  The next morning just put the container back on the blender and give it a whirl for a few seconds to remix the batter before you make the pancakes as usual.

The picture I took this morning was a "one" full recipe with only one pancake missing (we had someone sampling before I got the camera out!!   I didn't add the fruit sauce first, so folks could see what the plain pancakes look like.  I used an electric griddle at 350 to make these, using spam spray on the non stick surface.  I could have made them a little lighter in color and they would have been good, it is important not to dry them out, they are so much better in the moist stage, just barely browned. We like a little melted butter drizzled over the pancakes with the powdered sugar--with, or without warm fruit sauce.  For company I put a spoonful of fruit sauce on each pancake and roll them up or simply fold over with a dollop of whipped cream.  Yummmmy!

Google Maps Adds Bicycle Routing!!

Google Maps has finally listened to us Cyclist and has added this great feature in its maps function to get directions by bicycle. Just go to Google Maps and punch in your desired start and end points. Then you to select "Bicycling" to see all the routes, including dedicated cycle paths. Bicycling directions are in beta. Use caution and please report unmapped bike routes, streets that aren't suited for cycling, and other problems here. In the meantime, Ride Baby Ride - Remember Always Wear A Bicycle Helmet!

Could This Be My Next Knife?

Looks nice, I think I need to see a few more reviews on this product be before I decide. I definitely love the sheath. Almost wish I could trade in my BK2. Maybe not the more knives the better.

So in the urban warfare environment, soldiers recognized the need for a close quarter combat knife. After studying and interviewing hundreds of real life hand-to-hand combat encounters, MACP Close Quarter Combat expert Matt Larsen worked with award-winning knife makers Chris Reeve and William W. Harsey Jr. to create the L.H.R. The knife itself features a 6.87" part serrated blade made from 420 high carbon steel that is covered with a black ceramic coating. It has an overall length of 12.25" and weighs 11.2 ounces. The handle is made of a special material called TacHide and is heavily textured for a secure grip in all conditions. A glass breaker and lanyard hole at the base of the handle round out the knife's features.

The durable hard molded sheath includes several straps that allow it to be attached in a variety of carrying positions. Designed to keep the knife out of an enemy's hands during combat, the knife can only be removed from its sheath by a hidden thumb release. Taking a look at Pyramid Tents.

Pyramid Tents are another style tent that are easy to setup and use. I love this drawing on the pyramid tent found at Tentsmiths. Go there to learn a little more background on these tents and other historical tents and shelters. They have a nice 11 by 11 size tent, which would make a nice shelter. You can also go to Northwest Woodsman for a slightly smaller version a 8 by 8 size. Below is a video showing just how easy pyramid tents are to setup.
